Buying a cutting board is akin to buying any other kitchen instrument. You should always buy the best board you can afford. This novelty of a cutting board is that it actually ages beautifully and becomes more attractive the older it is. There different types, shapes and sizes of cutting boards in the market and the onus of finding the perfect one for your kitchen is always going to be only on you.
There are two basic different types of boards that you can purchase - wooden ones or plastic ones. The fascination of a stone one, you will find is short lived if you purchase it because knives tend to blunt more easily on a stone boards. Research has shown that bacteria have a harder time surviving on the surface of a wooden board. The porous nature of the wood is said to deprive the bacteria of water thus causing them to perish. The bacteria have been found to die off in approximately 3 minutes from the surface of new or used boards. In the plastic ones, if cleaned immediately after use changes are that the bacteria will be washed away. But if the plastic one is marred by the knife blades the boards becomes more susceptible to the bacteria and they find a good place to thrive. If you plastic board has a number of knife marks on it then you will be unable to eliminate the risk of bacteria just by a hand wash.
The next thing to pick out is the right size. Since its use is a daily one you should buy one that can be easily cleaned and stored and removed when needed. If you have the counter space and you want to leave it on the counter top itself then you should get a size that fits that space. You can even get a custom-made one to fit into the counter. You should try to get one that is of a slightly bigger size, even though you do get them in small and medium sizes. This is because it gives you enough space to do your prep easily, making it less stressful. You can also find them in a myriad of shapes - standard round, rectangular and square shapes as well as novelty shaped in the shape of animals and fruits and such like.
No matter what kind you buy always remember to care for it regularly and wash and dry it to ward off the risk of diseases.
